ABOUT FUJI SOBA

Fuji-Soba opened its first shop in Shibuya in 1966 as the first 24-hour Japanese restaurant, supporting many businessmen working in Tokyo also known as ‘the city that never sleep, we grown tremendously together with Japan’s economic growth.

Currently, we have branches not only in Tokyo but also other leading cities of Japan like Kanagawa, Chiba, and Saitama. As of Year 2016, Fuji-Soba has achieved to own 116 shops in Japan as well as 10 shops abroad, such as Taiwan and Philippines. Thanks to the over 60,000 customers who visit our restaurants each day, Fuji-Soba became the top Soba restaurant chain of Japan.

 

For Dashi stock made from dried bonitos, we worked closely with the dried bonito specialty shop which Japan’s Fuji-Soba has been engaging with over the years to ensure best quality. Repeated discussions and brewing to perfect the Dashi-stock with superb fragrance and UMAMI. 

The most difficult part of this project was the invention of Kaeshi, which is a soy sauce-based seasoning sauce.It was a new challenge for us to customise the taste of our Kaeshi from its original “Japanese Taste” to something that would satisfy the taste bud of the customers in Singapore.富士そばは1966年、

We prepared 2 kinds of Kaeshi for our warm soba soup to make our Dashi-stock even richer and more flavorful.

Also, our buckwheat flour is imported from a well-established milling factory in Japan to Singapore under strict temperature control, after which it is being kept in the specially selected warehouse with excellent temperature control to maintain the quality. Our soba are freshly made at the store daily so you can be assured of its freshness and quality. At Fuji-Soba NIHACHI, you can enjoy freshly made soba at reasonable price range. Fuji-Soba NIHACHI offers traditional thin soba as well as thick soba such as the dipping soba and mixing soba. Customers at Fuji-Soba NIHACHI would be able to experience a brand new “Fuji-Soba”. 

Lastly, before the story becomes too long~

Through this Singapore project, we aim to create “Japan’s No.1 Soba Restaurant” which is easily accessible and, hope that our Japanese customers who have been living in Singapore for a long period will be able to feel relaxed when tasting our soba and also non-Japanese customers living in Singapore to know the tastiness and culture of soba.
